We will be travelling from Edinburgh center to Glasgow airport in August for a 1:00pm international flight. Can you recommend the fastest/ easiest public transportation options.

I would have thought a train to Glasgow Queen Street and then pick up the airport bus (number 500). It is probably going to take you about 1.5 hours. You can find train times etc here

The other way to go is get the 900 bus from Edinburgh (Princes St.) to Buchanan Bus Station in Glasgow and then transfer to the 500 bus to Glasgow Airport.
The 500 bus is designed for the airport run and has plenty of room for luggage on board.
