Two of us will be traveling from Edinburgh to Stirling and back in August for the Highland Games. Should we purchase tickets before online or wait to get to the stations? Any additional information is appreciated.

No need, the regular half-hourly electric service is essentially a commuter train - no seat reservations, no financial advantage to buying before.
A handful of InterCity services also connect Edinburgh with Stirling, but normal tickets are valid - there are no supplements to use these trains.
If returning same day, an Off-Peak Day Return will be the most cost effective option.
Currently ScotRail has abolished peak time restrictions, this is set to end in June but may be extended again.
If it isn't extended, the Off-Peak Day Return cannot be used to leave Edinburgh before 9.15am Mon-Fri but otherwise any train can be used in either direction.
