Sunday roast in Edinburgh

We will be in edinburgh on 8/23 and would like to get a Sunday Roast for dinner. I understand it is a crazy time of year so I was wondering how far out time wise would we need to make reservations for that date. Also does anyone have suggestions for a good restaurant/pub. We will be staying at the Hilton Edinburgh Carlton so don't want a place that is more than a 20 minute walk.

it appears you know about the Fringe when you mention "crazy time of year" so I won't drone on about the crowds.

Do you know that Sunday Roast is a lunchtime or early afternoon meal, rarely served for dinner?

I recently saw a recommendation for the Captain Darling in Stockbridge, which Google Maps says is a 26-minute walk from your hotel.
Many places will sell out by 2 or 3 in the afternoon. It's really lunch, not dinner. And I have usually needed a nap after eating one. Another option is to get on the tram and head out to Leith, where I have enjoyed a roast lunch at the King's Wark. The Granary was also recommended, but I wasn't able to get in there. Leith is a lovely place to walk off a heavy meal. The Royal Yacht Brittania is there if that interests you.

Check with your hotel , they may do a Sunday lunch and I have been there for a Carvery meal but that was many years ago. across the road is the Scotsman hotel and they certainly did them in the last year or two as I checked for a member of this forum who asked a while back.there are lots of bar / restaurants on the Royalmile that may do them but as you are aware it is a crazy time of year and you will be in the thick of it, few places take reservations this time of the year.
For information there has been major road works on the street outside the hotel for several years, the Northbrige has been having a major refurbishment/ repair job. It was supposed to last 3 years but now 7/ years later work is still going on and hopefully will be completed this summer. I was in the area about 2 weeks ago and it does look like things are moving on with the work.
I am presently travelling in Central/ Eastern Europe.

There are several highly recommended places for Sunday Roast. I recommend doing it at lunch as it often runs out before dinner.
I was in Edinburgh last week and had Queen's Arms, The Ox and The Broughton earmarked for Sunday lunch roast.
It is recommended to book well in advance. I booked the Broughton as it was the only one set up to take a solo reservation online.
Service was good, many people were having the roast lunch. I was disappointed in the very brown tough Yorkshire Pudding and didn't think it paired well with their red wine gravy. Sadly, I didn't think it was worth my $60 (Canadian) for beef dinner and a tea....but I am a frugal type. And I guess no one makes Yorkshire like a Mom does. Hers was smaller, lighter and a perfect cup for gravy.
