On the ScotRail page, they indicate that the rail pass is limited to "off-peak" travel on some lines. We're planning on taking the train (no, not the steam version) from Glasgow to Mallaig in July (with at least one stop). Are we going to be able to use the rail pass at any time? And while I'm asking, what's the difference between first and second class on this line? Do we get better windows and views in first?

The views at all the windows are about the same, but the front of the train sees them first. Of course the two sides, looking left and looking right, will have different views, but the first and standard class (we don't use second class anymore in this country) seats are not separated by which side they are on but by where they are in the train.
The windows will be similar for the length of the train.
EXCEPT - the trains on that line don't have a first class area or carriage - the only seats on the train are in Standard Class. If you have a first class ticket (perhaps as part of a longer journey) or pass you will have wasted money and will have to sit in Standard.
The Off Peak Day Return is valid on all three trains on that route, including the 8:21.
