We are a family of five traveling from Glasglow to Oban on Jul 5. We fly into Glasglow international at 11:40. It looks like the only train option to Oban is 16:25 but there is only a 7min interchange to make our next train. I'm not sure what to do. Another train leaves at 12:07 and I know that wouldn't work.

If Scotrail suggests a 7 minute transfer, then it is possible. I assume it is at Fort William?

The 16.36 from Glasgow Queen Street is direct to Oban no need to change at Dalmuir. You could go to Dalmuir and catch the same train at 16.57 by catching bus number 757 which runs every half hour from the airport to Dalmuir
The cheapest tickets are called Advance Singles where you have to travel on booked train. If you can't see these you are looking too early. Expect these to released 10 to 12 weeks before travel date
