We are trying to book train tickets from Edinburgh to London on September 30th (Saturday) and can't seem to find any trains. Are there no trains to London on weekends towards the end of September?
There will be service. LNER have not yet released weekend tickets for the last weekend in August (Bank Holiday weekend) or any weekend in September.
Checking on National Rail their engineering calendar does not yet go out that far.
Very often at weekends there is engineering work. September is a favourite month for work between Edinburgh and Newcastle and has been for years. So there may be part route coach replacements and/or lengthy diversions via Carlisle (non stop), but you will get through.
You need to re-check in a month or so's time.
There 'should' be times released 8 weeks out, which is the current national timescale, whatever other sources may tell you (which = end July/start August) but you will get there.

You are about a month too early - be aware that tickets appear a bit earlier as they will be fully flexible ones that are much more expensive. Today the 26th August is for sale - so your date will officially be on sale 9th July
Besides LNER, there is also LUMO. But their schedule isn't out yet as well.
Although LNER say on their website that weekday reservations are open until early December I have just been looking at another unconnected forum enquiry for weekday travel in the preceding week, and LNER are not yet open for booking- TPE and XC are open on the Edinburgh to York stretch that week with a system warning that times may change, but not LNER. There must be a reason for LNER's caution.
If there is engineering work happening Lumo don't do diversions. They just cancel over the affected stretch and rely on other companies' coaches. There is always a possibility that in due course the fastest route may turn out to be the Avanti West Coast trains every two hours from Edinburgh to London Euston. Only time will tell, in a month or two's time.
Over the weekend there was a formal request to the Government by Network Rail to be allowed to reduce their engineering notice time from 12 weeks to 8 weeks- which is the de facto current situation. One of their arguments is that train companies can always open bookings earlier, then send out notifications of amended train times- rather like many of the airlines are currently doing.
Tickets for exactly 2 weeks before your travel date are only going to be released on 24 July, so your date won't be released until after that- end of July/start of August- as I originally stated.
If you can't book, nor can anyone else!
If you go to either LNER's website or their app, you can set a ticket alert for that date. LNER will, supposedly, send you an alert when tickets are available for purchase.

I am also manually checking for the OP while also checking for another forum member travelling with a complex itinerary at the same time (who is being advised by PM). Sometimes tickets get snuck out, as has already happened to the other person- where advance tickets on another route quietly appeared almost 16 weeks ahead of travel date and got snapped up so fast it was astonishing given the unlikely route being travelled on- they doubled in price within 48 hours of release, but could potentially have doubled again. A bit of a ticket shock to that person!!
Looks like Lumo tickets opened up for the 30th September. However, the journey time is 6hrs 20 mins because of a stop in Newcastle. LNER still doesn't show any availability for the 30th September even though there is availability in October even on some weekends. Wonder why!
Lumo are taking 6 hours because it is a 3 hour bus ride from Edinburgh to Newcastle, then train forward.
They only have to worry about chartering a few buses, not the big fleet LNER have to charter. The usual story of LUMO (with their pathetic offering of 3 trains in the day), the upstart minnow trying to steal a march on LNER who operate a level of service they never will.
So it will be like the other weekends in September where Cross Country and Trans Pennine run trains to Berwick upon Tweed, then buses from Berwick to Newcastle, also some buses Edinburgh to Newcastle.
LNER will also run trains Edinburgh to Berwick, buses Berwick to Newcastle, train forward, plus a through train every hour or so Edinburgh to Kings Cross diverted via Hexham, with the same journey time as the train/bus/train combo.
The through trains will be at 0731 (arrive 1347), 0922, 1044, 1141, 1256, 1355 and 1554 (the last one)- if you can't book, then no one else can either.
Based on the previous weekend LNER fares on the through trains will be £63.90 before railcards, £17 more than LUMO.
LNER should be opening bookings sometime this week, which would still be 8 weeks ahead.

It looks like the trains on 30th are either direct but going via Carlisle to avoid the engineering works and taking 6 hours or 5 hours with a change at either Carlisle or Crewe.
For anyone else reading this the Avanti West Coast trains from Edinburgh to Euston are running as normal that weekend - that is every two hours through train from Edinburgh to Euston, without a change at Carlisle, Crewe or anywhere else- taking 6 hours.
Because those trains run via Birmingham some people choose to change intermediately to get to Euston about 45 minutes faster (it also sometimes saves money to change at Crewe), but you don't have to.
On the other hours there is the Transpennine Service to Manchester Airport, changing to an Avanti train from Glasgow at Carlisle (or Preston). That again is the normal timetabled service.
That weekend the Euston route is very expensive.
Here is what my itinerary looks like:
07:31: Depart Edinburgh
09:06: Carlisle (Pick up only)
10:59: Newcastle
11:27: Darlington
11:58: York
13:49: Arrive London Kings Cross
The train arrives at Carlisle at 0902, departs 0906 (where the bi-mode train changes from electric to diesel traction) and reverses direction of travel (or is meant to) at Newcastle, so arrives at 1046. It also returns to electric traction at Newcastle.
So if you were in a forward facing seat from Edinburgh you will be facing backwards now for the rest of the journey.
On the way between Edinburgh and Carlisle there is also an unadvertised stop at the site of the former Abington station, between 0811 and 0816 1/2 to allow an Avanti Glasgow to London Euston train to pass you.
At Edinburgh you are scheduled to leave from Platform 9, but check on the day on the departure boards in case of late changes.

I just saw this on LNER:
We are aware of planned industrial action on Saturday 30 September and Wednesday 4 October.
We have a reservation from Edinburgh to London Kings Cross on that day and flight out of London the next morning. How worried should we be? Should we plan for alternatives? What alternatives can we consider?
LNER is one of the few companies who will be offering service that day on a heavily reduced timetable, and with bus replacement between Berwick and Newcastle- details to follow at the end of this week.
The first service is normally at around 0800 from Edinburgh which is expected in Kings Cross at about 1400. Whether they are able to operate the scheduled diverted through trains via Carlisle remains to be seen.
There is also Lumo trains (with also bus replacement Edinburgh to Newcastle), National Express, Megabus and Flixbus between the two cities, and air.
But hold the faith until train times are issued.
