Scotland visit with 6 adults & 4 kids (11-8)

We are meeting our family, who live in London, up in Scotland for a family adventure. We are wanting to spend a week in Scotland, the last week in July when my nephews are going on holiday for the summer.
I was hoping to find one place & then do train or driving trips from that location. I was hoping to be a reasonable train ride away from Edinburgh so we didn't need to try to drive in the city.
I was thinking of North Berwick or Linlithgow because I have checked them out for train rides & they don't seem too bad.

Ok now the questions:
Any other ideas for a town that would be reasonable to stay in without staying in Edinburgh itself? I know we are a week before the craziness of the festival which we are hoping to avoid for the most because of the crowds.

Other ideas of places to visit in surrounding areas around Edinburgh besides just castles? We like walking tours as long as it do able for 4 kids. We were thinking of going up to Stirling but I think that is as far north as we want to go.

Look at Visit Scotland web site for touring ideas. I have been to Stirling and is worth the trip to see the Palace. Linlithgow Palace is in a lovely location. An interesting idea for your family would be to follow "The Mary Queen of Scots" Trail. Going to locations that figure in her history will lead you to a variety of fascinating locations. A lot will fall in the day trip category from Edinburgh and surrounds. Historic Scotland web site has most of the Castles listed...a lot have been featured in "Outlander" and various other shows. Secret Scotland web site may lead you to things to do away from the crowds. There are several small hotels and B & Bs in Edinburgh and suburbs so you have a good chance to get pleasant accommodations the week before the festival if you book ahead. We stayed near the University which was walking distance to downtown and had parking for our auto. But you could rent a car before or after your time in Edinburgh where you don't need it. You might look into self catered accommodations since you have so many people. These are more likely to be found outside of the city.

Linlithgow is more centrally located than North Berwick. If you rented a car there, you'd be in a good position to take driving trips around different areas of Scotland without having to trek back & forth past the Edinburgh metropolitan area. Unless, of course, you're really keen on the North Sea coastline.
