Any suggestions where and when hotel reservations could be made for this event in 2021. I have tried St. Andrews and have been informed by 6 different places they are sold out. Do hotels in Edinburgh allow one to make reservations for 2021. Any advise would be appreciated.

Contact them and ask them? Accomodation in St Andrews is limited and I guess a lot of rooms are booked far in advance for the players, TV-crews and others. I stayed in St Andrews just before the last Open played there and talked about it with the owner of the BnB I was staying at, their rooms were booked during all future Opens by the same TV-channel.
But Edinburgh is a bit far away, I would look at Dundee first and see if I can find anything there.
