We are traveling to Scotland with 8 adults, playing golf for 4 days and would like to plan an excursion for two days we aren't playing golf. We will be staying in St. Andrews for the duration of our trip which is scheduled for June 15th thru 22nd, 2023. Would love to go to Balmoral one day and have been told our best bet is to get a driver guide for a group of 8. I've gone to guidescotland.co.uk website searching for a guide but have never received a response. We have also been told to do a walking tour of St. Andrews but I'm at a lost as to what that entails? Looking for any advise or recommendations that might help.

I think it is probably walking around St Andrews. Which is nice.
If you are on Facebook then you might like to think about joining the Scottish Travel Society and ask this question there. There are 41.1k members from all around the world on it and I'm sure someone could help you with an excursion from St Andrews to Balmoral.
Many of the tour companies also offer private tours tailored to a group's interests or itinerary and that might be a potential route. One company for example is Rabbies https://www.rabbies.com/en/info/private-tours/private-touring-group
