Any recommendations for a mid-range (>$200 a night, if possible) B&B/guesthouse in Aberdeen? I'll have two nights (essentially three full days), so I'm hoping to spend one day exploring the city itself, one day going to Balmoral/Ballater (I'm hoping the castle will be open based on the dates of my trip compared to the summer public openings of the last few years, but TBD), and one day just generally exploring Royal Deeside, including possibly Dunnotar Castle. I may rent a car for the Royal Deeside exploration day-still debating on that!
We were in Aberdeen for three nights. Arriving by train, we picked the Premier Inn 'cause it was a short walk. It's also a short walk to all the good music pubs. It was quite busy due to a big dart tournament with the teams all very drunk and costumed. I walked to the Arnold Clark car hire depot as well. We're frugal, and I assume you meant 200.
We really enjoyed the Maritime Museum, another short-ish walk from the hotel.

We stayed a few days at The Spires ‘serviced apartments’ on south side of town. A good option with a car as it had parking. We were there pre Covid and it was cheap and easy to access. Had a kitchen and a couple bedrooms as I recall. Not really walkable for dining out.

A lot depends on how you're arriving in Aberdeen. If you're arriving by bus or train, there are several good hotels near the bus and train stations. Best thing to do is compare prices for the dates that you'll be there. The further ahead you book, in most cases, the better the price will be. Unless there's some special event scheduled for the time that you'll be there, in which case prices will be higher.
The Ibis, on Shiprow, is closest to the bus/train station, and is close by the Maritime Museum. It has received favorable reviews on this site. Plus it's close by the bus station for your bus journey (Route 201) to Ballater. If you're going on to Balmoral, you'll need to take the bus which continues on to Braemar.
Premier Inn, on West North Street, is a bit farther away from the bus/train station. It's a bit grim looking from the outside, but you can't judge a book by its cover!
Travelodge Central, Bridge Street, just up the hill from the bus/train station, and just before Union Street, is your best choice for an economy stay. It's definitely not the Ritz, but if you just need a place to sleep, that is close to Union Terrace Gardens, and all the pubs and restaurants, it fills the bill.
Holiday Inn Express, Chapel Street. This one's a little farther away, and you'd probably need to take a taxi if you have a lot of luggage. It's at the west end of Union Street, and is close to some of Aberdeen's best restaurants.
