Looking for a woolen mill to visit in Scotland the week of 11/20. Have not found any open. Suggestions?

Lochcarron mill at Selkirk is possible, they seem to be open all year. An easy drive from Edinburgh.
I second the Lochcarron mill at Selkirk suggestion. It offers an excellent tour of its facility and there is a shop on-site. A friend of ours who sews a lot bought a bunch of remnants after our tour of the facility in 2022. When we went there we were staying in Peebles.
While in that area we also visited the borders abbeys (Kelso, Dryburgh, Melrose, Jedburgh), Rosslyn Chapel, and Robert Smail's Printing Works.
