I am traveling to Scotland--mostly in Orkney and Shetland--in late April to mid May 2024 and wish to find opportunities to take a 1-day classes/workshops in watercolor painting/pencil. Looking forward to the beautiful landscapes! Normally i'm an intermediate acrylic painter but will travel means using watercolor. Level: beginner+. Any tips, contacts, ideas?

Red Houss Shetland advertises individual and small group one or two day courses for water colour and sketching.
There may be others offering one day courses so it might be worth contacting Lerwick information centre and asking them.
I'm not aware of anything sdimilar on Orkney, so your best bet would be to contact Kirkwall Information Centre.
