I see lots of sites focused on Portree for the "hub" of Skye - is that the best place to stay for two nights? Are there other areas of Skye that are also good areas to stay?
Also, do you all recommend bringing a car along?

You will need a car if you visit Skye. Public transport is AFAIK not plentiful.
Yes, a car is a must. We stayed at an inn in Waternish and I would not choose that location---way too isolated. When we return we will stay in Portree or very near by so we will have some restaurants to choose from.
Have to have a car to visit Skye. We stayed in Portree, made our reservations almost a year in advance. Our B& B was just a few miles outside of the city center. Very convenient to drive to see the sights...and close enough to town for dinner. Unless you want to be in the middle of no where and self cater.. I certainly didn't feel like grocery shopping and cooking and cleaning on holiday...
On the mainland but about 10 min from Kyle of Lochalsh Bridge is the Dornie Hotel, walking distance to Eilean Donan castle. It has a good restaurant & pub, very popular with locals. Rooms are nothing fancy but clean and comfortable, and affordable.
