Can't help. Went fly fishing in Scotland about 15 years ago but dont have the contact any longer. Scotland has excellent fishing but my trip was so-so for the cost.

If England is on your list you know the high holy river for fly fishing is the Tyne. Another good is stay in Winchester and fish the Itchen. That one maybe I can find the contact for. But $$$$
It's a big topic to tackle (if you'll pardon the pun) if you're starting from scratch.
The most well known salmon rivers in Scotland are The Spey, The Tay and The Tweed. There's numerous others that will see a run of salmon in season (February to October) but the summer months are when fishing is best. It can be expensive; you'd need to buy a permit for your chosen beat (stretch of river) usually sold by the local tackle shop or direct from the organisation that owns / manages a given stretch of river.
Do you have any experience of game fishing? Would you be bringing your own tackle? Doing it off your own initiative would be quite a big undertaking for the complete novice without the wherewithall to do some research outside of this forum. Is this your first point of contact with the subject online?
Guided tours fishing the great rivers of Scotland are plentiful. For me to respond it would be very much a case of "let me Google that for you" as I don't have any recommendations.
By all means post further with your thinking and questions and I'll try to draw on my own knowledge and experience (admittedly from decades ago) to assist you through having a conversation about the subject.

You remineded me that I have to book my fall fishing trip. Fall is Bosnia & Herzegovina. Very, very good fishing, very affordable fishing, great guides and a wonderful hotel beside a very nice river. Pairs well with Croatia. I made the call, they are checking dates for me. Thank you again for the reminder.
Option two Montenegro. More excellent fishing and more in country sightseeing that Bosnia. I am not as thrilled about the fishing accommodations but the country is exceptional from the coast to the mountains. I know good fishing guides in both and I know good holiday guides / trip planners in both.
