Would love to have some recommendations on where to stay in Glasgow that would provide 2 separate bedrooms but one full "apartment".

Have you checked booking.com or Airbnb? Those will probably be one of your best places for finding a two-bedroom apartment.

Further to Mardee's advice, adding "Merchant City" or "west end" to your search may help narrow down your options. The Merchant City is a neighbourhood in the city centre, the west end is in... well... the west of the city. Both are good places to stay if you want to rent an apartment.

Thanks all! Yes, I've been looking around but not having much luck! I might just have to pursue a "regular" hotel.

I stayed in an aparthotel in Glasgow and Edinburgh this Spring. I really liked City Apartments aparthotel in Glasgow. They may have multi bedroom 'suites', but not sure.
I did a Google search, and Fraser Suites in Glasgow have some 2 bedroom suites. Google AI '2 bedroom aparthotels in Glasgow' and a number of results turn up.

There are also Adina Apartments Hotels, and I know that they have one or two in Glasgow city centre. I stayed at one in Berlin and I’m staying at one in Stuttgart in December, and they’re very nice. Now they’re not full apartments, but they are suites with multiple beds and full kitchenettes, and some even have washers and dryers. It’s definitely worth checking it out.
