We are staying in Edinburgh, want to find some pubs/bars that have performers that play live local or traditional Scottish music.
The only one I know of is Sandy Bell's, which is down by Greyfriars, the old church and cemetery. It's a pub, where you can get some snacks to eat and, obviously, alcohol, but they have a room in the back where a lot of locals will come and play and perform. It's a small place, so it can get crowded, but it's a lot of fun. https://sandybells.com/
Sandy Bell's is the first choice (although it can be really crowded) but check out

Very dependent on the day of the week for most places.
I recommend checking out Whistle Binkie's: https://whistlebinkies.com/
