Edinburgh Castle Tours

I am a bit confused and hope someone can advise. The Castle website shows official guided tours which may be purchased with your ticket that last 30 minutes, yet I see that many forums suggest allowing 3 hours to tour.

At the end of the 30 minute guided tour, should one make their way back to the beginning and start over seeing the castle to cover everything? And, how steep and narrow are the often damp steps?

We didn't take the tour but I'd have to think a 30 minute tour is quite a whirlwind and shows a couple of highlights. The website also shows suggested itineraries on your own, one which suggests takes 2-3 hours by itself. The Castle grounds are huge and include a couple of museums, depending on your level of interest you could spend a full day there.

It's an old castle so there are some narrow steps and passageways but I don't recall anything especially troubling for the average mobile person.

There are indeed some steep and narrow steps and slopes within the walls. However there are handicapped access to many areas. You just need to ask a docent. They had a van to take mobility impaired tourists from the entrance outside the walls up to the top. And there is an elevator to go up to the Royal apartments, but it's hidden away- you have to ask.
