We are driving a small car the first week we are in Scotland but the second week , three more adults are joining our group. Should we rent two small cars for driving from Glasgow to Fort Williams for touring the highlands or get one larger car.

What's you definition of a small car? 3 adults with luggage sounds tight to me. And 5 adults with luggage will need a big car by Scottish standards.

We were in England a couple of years ago and rented their version of a mini van, 4 adults, 2 children with carryons and it was extremely tight.

If you rent two cars it will give you more flexibility in terms of what you can see and do and you will not be limited to all going to the same places.
So if, for example, some of the group want to visit a distillery and the others do not then a second car means you can easily plan for an alternative for them. Everyone is kept happy.
That said five adults and luggage will fit much more comfortably in two cars rather than one.

I had a look on Europcar for Glasgow Airport, and based on driving one of the examples in the same colour, if it says it will sit five it will. But they will be a tight fit. The big issue is the luggage, so the guides they put out are correct.
I would go with Sownack's advice above you may consider two cars in stead. The issue with a larger vehicle is the roads can be quite narrow in the Highlands, far narrower than you may be use to. Plus the other considerations of being able to do different trips.

Not Scotland, but in 2012 we had a full-sized mini van in Germany. There were four adults and our luggage (small suitcase and a backpack each) just fit.
