We will get pounds from an ATM at the airport in Edinburgh, but where can we change some currency for coins for the buses and trams?

First: You can (probably) buy tram tickets with your credit card: http://edinburghtrams.com/tickets/ticket-options
Second: If I want coins I usually just buy myself a bottle of water or a cup of coffee or something like that.

you can buy tram tickets with credit cards,there is also a stall just outside the exit you can get bus tickets.
