Book ahead sights in Edinburgh?

I'll be in Edinburgh in early September. Are there particular sights I should plan to book tickets for well in advance? A good portion of my broader trip is focused on hiking and/or part of a Rabbie's tour (already purchased), so I don't have a lot to pre-book. Maybe Stirling Castle, Holyrood Palace, walking tours, but I'm not sure how far out I should be planning for a September trip.

Also, if anyone has taken a Harry Potter walking tour in Edinburgh, which one do you recommend? I was looking at the Potter Trail, has anyone done that one? It's "free" but of course they say tips are always welcome!

I'm not sure "well in advance" is required for Edinburgh Castle tickets, but a couple of weeks ahead isn't a bad idea. Holyrood House doesn't require much advance.

We purchased a Mercat Tour that included the Royal Mile and Edinburgh Castle about a month in advance. I highly recommend them. Our guide was very knowledgeable and friendly. They do lots of other tours, too.

I'd pre-book Edinburgh Castle. We were there in early September last year and they were turning away people who didn't have advanced tickets. A few weeks should be sufficient; you can monitor availability on the website.
