Not a B&B but a small hotel with a nice restaurant and parking close to the centre of Inverness is the Heathmount Hotel. We had a restful night and were served breakfast by the owner. We had dinner there too and it was very good.
In Edinburgh the Dynamite Club, 2 Cambridge Street gets excellent reviews. We stayed at Erland and Helene's previous place in Edinburgh and it was the best B&B I've ever stayed in. I have their new place book marked for my next trip to Edinburgh.
In Stirling American friends of mine stayed at Victoria Square and said it was super. Another place I have bookmarked!
In Stirling we stayed at Munro Guest House. Rather than Inverness we stayed in nearby (20 minutes) Nairn at Sunny Brae. We liked both.
I second the recommendation for the Sunny Brae B&B in Nairn. We absolutely loved our stay here. No complaints at all. Nairn is a very pretty seaside village about 20 minutes from Inverness. We visited the Elgin Cathedral ruins, Moray Distillery, Cawdor Castle, and Culloden Battlefield from Nairn.
You might consider the Glenmoriston Townhouse Hotel Inverness. Beautiful location right on the riverfront and a convenient, scenic walk to downtown.
Inverness: Holly Lodge in Strathpeffer just 20 min from Inverness (if you are driving a rental car). Of my 10 nights staying in 7 different B&B's between Inverness, Edinburgh and Glasgow this was far and above the very best place I stayed and was the most inexpensive, which shocked me. It is unbelievably beautiful, peaceful and hospitable. I will definitely be staying there any time I'm in that area.
Even without a rental car Strathpeffer can be reached by hourly bus from Inverness. I have a different favourite hotel there.
Don't forget to visit the shops and cafe at the wonderfully restored old railway station while you are there.
