Ma'am, we're looking at heartofscotland tours for next summer. Rabbies might be worth a look, too.
Check on free walking tours, too. We've done those elsewhere with good results, and pay about $20/person as a tip so to speak.

I'd recommend getting copies of the Rough Guide to Edinburgh and Rick Steves' Guide to Edinburgh. Study them and arrange your own itinerary. That way, you can see what you want to see, and take the time to savour each location.. You'll never feel rushed.
Even though the last edition came out in 2001, the Blue Guide to Scotland contains a wealth of information about historic sites in Edinburgh (and in the rest of Scotland, as well). You can probably get a copy through ILL at your local library, so that you don't have to spend money on a guide that's over 20 years old.
