Please share a 7 day itinerary for Scotland. We will have 2 kids under 10.
OP, you can expect folks to help with more specific questions you might have.
But to get anything worthwhile from a general question like this, you need to
provide much more input. Cost targets, types of activities, time of year, are examples.
You might try AI also, but you'll find it will want the same kind of input to provide
anything of value.
2 kids under 10 - Edinburgh Castle... lots fun stuff. Maybe too many kilts. Outdoors stuff - Aviemore in the Cairngorm National Park. Boys or girls? - Western Scotland has the climate of the Himalayas and is FILLED with exotic flower gardens. Have fun.
Without any information about your budget, dates of travel, interests and preferences, modes of travel (trains and buses only or rental car?) It's difficult to provide any meaningful advice. However, as a start, Rick has an itinerary you might use as a starting place.

Edinburgh is tons of fun for the whole family. Inverness might be a good 2-day excursion to enjoy Highlands culture and music. Getting there via Stonehaven and seeing the spectacular Dunnottar Castle might be best if you plan this excursion. Just another point of view.
What attracts you to Scotland and why do you want to visit?
What sort of things do you and the kids enjoy doing/seeing?
What time of year?
where are you planning toi start from in Scotland?
Are you hiring a car or using public transport?
Are you wanting to move accommodation every night, or have 2 or 3 bases doind day trips?
This website has suggested itineraries of 6-8 days which will give you some ideas of what is possible - they involve one night stays and there might be too much driving each day for the kids.
To provide meaningful itinerary, we need a bit of help from you - otherwise you could end up with an itinerary from hell.
