We just returned from Scotland and can highly recommend the following:
The Bosville Hotel in Portree, Isle of Skye (also has a great restaurant and bar)
The Pearl Oban Hotel in Oban
David Bann vegetarian restaurant in Edinburgh (excellent!)
The Cairngorm Hotel in Aviemore
The Old Bridge Inn restaurant in Aviemore

I concur with your endorsement of The Bosville hotel in Portree. We loved our stay there! It was one of only a handful of places that offered a family room. It was large and spacious and the hotel is in the center of town.
