So the day before you leave Portugal. The day before your hotel stay or AirBnB rental ends, you test positive and must stay in Portugal. Any thoughts/experience concerning finding such accommodations on short notice?

Yes, ask where you are currently staying first, if that is a no-go, turn to Booking.com or another online app.
I would seek local medical help, just to have a number on call in case things get severe, and they can explain any local requirements. I am hearing, anecdotally, that quarantine is not the forced lockdown that it once was in many places, more an isolation time, sometimes even allowing you to go out briefly for medical care, testing, groceries or take-out. But again, all that depends on local requirements.

If your current accommodation can’t be extended, look at VRBO, Booking.com, Trip Advisor rentals (and a last resort for me would be Airbnb). It’s unlikely that you won’t be able to find anything, even at short notice, but if you are travelling peak season, it may not be what or where you would ideally like to be located.
