Rick's book on Portugal doesn't mention eating vegetarian in Lisbon, Porto, and more. Help!
Welcome to the forum. When traveling through Portugal I was able to find vegetarian dishes. I tend to eat vegetarian (even though I am not vegetarian). I do eat fish & occasional chicken.. I find it helpful to check out menus online. This may be helpful:

Portuguese soups are mostly vegetable based.
Most restaurants will have vegetarian options. And, reading menus outside before entering will help. You can also access menus online for most places at Zomato.
I'm not vegetarian, but some of my friends are, and their favourite restaurant is "daTerra". It's only vegetarian food. It exists both in Lisbon and Porto.
As said before, a vegetable soup it's only about vegs, nothing else. Except "caldo verde", that has a slice of chorizo.
I think you will be ok. There are many options.
FYI - In Spain, vegetarian implied "no beef or chicken". So fish (tuna) was part of the salad in some restaurants.
Don't know if that holds true for Portugal.

I have a vegetarian friend that had to explain, once, that salmon is not a vegetable...
It reminds me of a flight back to London from Portugal a few years ago and they only had cheese and ham sandwiches left. The lady in front of me wanted a vegetarian option. The hostesses suggestion was to buy the cheese and ham and take the ham out!
As with any dietary requirements, learn the essential words in Portuguese.
The major towns will have vegetarian restaurants, but the choice will be more limited in small, out of the way places. Omelettes and salads are to be found on most menus.
