Atlas obscura website lists unusual things by country and map.
Eat goose barnacles (perceves). Google them. They look... But they taste delicious.
Otherwise, Atlas Obscura is a good shout out.
We did a 3 1/2 hour Tuk Tuk Tour with Luis in Tomar that was great.
You can check out the Stonehenge of Portugal outside of Evora as well as the Bone Chapel in Evora. We also highly recommend Botequim da Mouraria in Evora. You need to be there when they open since they only have 15 seats. When you leave you will have 13 new friends.
The hill top town of Marvao is a unique place to spend half a day.
We had a ball with the students in Lisbon, Coimbra & Porto the last week of April and the first week of May. They were jumping in the fountains in Praça Martin Moniz in Lisbon & the Fountain of Lions at the Praça da Academia in Porto. They were marching around town in their Harry Potter cloaks. Speaking of Harry Potter, Lello & Irmão Bookstore is worth a look!

I spent a few days in eastern Portugal with a car. There are lovely medieval hill towns to explore. I stayed in the tiny walled town of Castelo Rodrigo and did a night tour to the prehistoric rock art in the Foz Coa valley.
In Tomar, there's a 14th century restaurant. Dine by candlelight only, menu is limited to what would have been available back then (no tomatoes, chocolate, rice, potatoes), seating is on benches cushioned by furry animal pelts, drinks are in earthenware cups, etc. The place was fun, the food was very good (dessert was just so-so) and the service excellent.
