Where do you pick up an Uber at LIS? I've only used Uber once in the US a few years back. Any tips?

The pickup point can change, but as I recall, there is a separate lot just across from the airport entrance that is mostly used. It was easy, and cheap. We also do not use Uber much, but in Lisbon and Porto, it was almost cheaper, (and much faster) for the two of to use than public transport. Disclaimer: that was just pre-Pandemic (February 2020) so things may have changed

If you mean at the airport:
After you get your luggage, proceed upstairs to the ARRIVING level, exit the building and walk directly across the road is a little lot for pickup and drop off. That is where your Uber will go to pick you up.
Within the city, like in the US, Uber will locate you by your phone and suggest a meeting point

We’re not big Uber users at home, but found it convenient and reasonably priced in Lisbon.

What Dennis said! They are plentiful and inexpensive. If you are going to be using Uber frequently while in Portugal, you might want to download Bolt. It’s more widely used by locals because it’s pretty consistently cheaper. Same drivers and cars. I use it most of the time these days.
