Regarding covid restrictions, there is no way to know what the rules will be in July.
Our trip originates in New York. We fly to Zurich and take a flight to Lisbon. We then fly from Lisbon to Florence Italy for two weeks. We fly through Lisbon on our way back to US but only to airport. How much testing is required? How about customs in Portugal and Italy.

It’s just to early to say. When I left Italy in October, I needed to test 3 days in advance. My daughter left Italy in December and she needed to test 24 hours in advance.
It will be fine. All will be clear and easy. Just check back in May or June.

And how is SAS involved? Anyway, it is way to easy to easy to ask about testing and other covid-related rules. They will change many times before your trip.
Regarding customs, it is handled at your first arrival in a new country. Assuming you have nothing to declare you choose the green lane in Lisbon when you arrive, and the blue lane when arriving in Italy.
Perhaps some confusion of SAS and Swiss.
And I thought it was just a myth that Americans can't tell the difference between Sweden and Switzerland :-)
