Suggestions for this type of person? (Southern Coast)

We will be in the Algarve region for about 4 days after being in Lisbon for 5 (the last two weeks of April). We are 52 and 48, as well as my 64 yr-old sister. This might be our only trip to Europe so I'm doing what I can to make it enjoyable. We don't like typical tourist attractions.

In which town would you suggest we stay along the southern coast? I doubt we will want to stay in more than one town due to already having done a lot of walking and sightseeing in Lisbon. We will have a car and I plan on renting a gravel bike for at least one day while the girls do their thing on the beach (a few hours of beach for me is plenty).

Any advice would go a long way. Thanks

Good Morning from Quinta do Lago, near Faro. We spent 3 months here last year,and are ending our 2 months today (with much sadness I might add!). A couple of options are Lagos, great old town, on the water with nice beaches either a short walk from town or with hotels overlooking. Good friends stayed in Olhao, more to the east, and loved it. Also beaches, but you had to take a small ferry across the lagoon to get to them...but lots of local charm. Both have lots of hotel/airbnb options.

For biking we took a wonderful bike trip just outside of Silves (def worth visiting on its own),that started with a farm breakfast and then pedaled through some beautiful areas. Not mt biking (which my husband is really wanting to do here), but good hills and eve better scenery. Message me for the info if interested (or have any questions). .
