My husband and I are adding on two days in front of our rick Steves tour of Portugal and are planning to rent a car at the Lisbon airport and drive to Lagos to stay two nights to see the Algarve area. Wondering about the difficulty of renting a car at the airport and logistics of driving to Lagos. We’ve already booked the hotel but not the car.

Driving from Lisbon to Lagos is straightforward - mostly motorway - about three hours.
There will be tolls and you may be able to rent a payments transponder with the car.

Where from are you flying in? I'm asking because it is really not recommendable driving that route after a long flight, with time-difference. It is too dangereous for you and all the other cars on the road.
And you's should inform yourself if you need an IDP.
You easily can go to Lagos by Metro to station Oriente and take the Rede Express from there. It doesn't take longer but it is cheaper and safer.
