We're arriving in Lisbon, Portugal and departing Madrid, Spain the end of October, 2017 and would like to hire experienced guides. Our interests include food and wine, photography, walking/hiking/biking and interacting with locals. Less interested in churches and castles. Has anyone worked with local guides they'd be willing to recommend?

Even though they are a tour company, they do private tours and would likely work with you on itineraries - Your Friend in Lisbon - is great! I took a private tour with them when I was 'scouting out' Portugal as a retirement destination. After the guide learned of my plans to move here, she went out of her way to give the tour with that in mind. She even sent me links of apartments to rent after the tour. I have since used the things she taught me about getting around Lisbon frequently.
I highly recommend them.
