Hello, we will be in Lisbon and Porto in May and trying to plan some day trips, but need some clarification and help on different online train websites for some of these train ticket purchases. We are using the Combios de Portugal cp.pt website for purchase of tickets between Lisbon and Porto and back, but it looks like for travel from Porto to Santiago de Compostale, in Spain, the train ticket website would be through Trainline.com. I cannot find Santiago listed on cp.tp from Porto. Any thoughts?

CP will only sell you a ticket as far as Vigo- the end of their railway system.
From Vigo you would need to book a ticket with RENFE- https://www.renfe.com/es/en
You will see three options for Vigo- select Vigo (Todas).
Todas just means 'All Stations'. It will automatically offer you Vido Guixar- the same station as CP arrive at.
Many of the Vigo to Santiago trains are Regional or Media Distancia trains which cannot sell out, and can be bought on the day, but a few are Alvia (higher speed) trains which need to be booked ahead. Don't worry about the train type, just book the trains which suit you and connect with the CP services.
Santiago doesn't really work as a day trip as 1406 is your earliest possible arrival, and 1732 is the last connection back. I would really want to be on the 1634 for the comfort factor. Maybe 2 hours is worth the long day to you, or maybe not.
RENFE it seems can't book this through international journey either.

This trip requires two separate ticket:
Buy tickets from CP from PORTO CAMPANHÃ to VIGO GUIXAR, transfer to spanish train,
Buy ticket from RENFE from VIGO GUIXAR to SANTIAGO DE COMPOSTELA.
The other option is the bus from Porto Campanhã to Santiago de Compostela, about 4 hours.
