Portugal & Spain in May

My husband & I will be spending 3 weeks in Spain plus a short trip to Lisbon (4 nights).
We will have a car, and from Lisbon we will be heading to Salamanca with a 1 night stop, somewhere.
Does anyone have a suggestion of where we should spend this night?
I would like it to be somewhere special as it is my husband's birthday!

My ideas so far include:
Obidos (not the castle but perhaps Casa d'Obidos), Bussaco Palace (Luso), a quinta or pousada in Central Portugal such as Pousada Belmonte, Quinta de Alcaidaria (near Tomar), Palacio da Lousa or Pousada Ourem.
Has anyone stayed in any of these?

We will have spend much of out trip in cities, so we would like to stay either in the countryside or a small village/town.
A good restaurant for dinner is also important!

For a great "back door" experience consider visiting Castelo Rodrigo in the Coa Valley. I stayed at a wonderful B&B called Casa da Cisterna. I had a great dinner at the Casa and there are other restaurants in the area. The proprietress offers evening tours of the Coa Valley Archaeological Park, arriving at dusk and provides a knowledgeable and interesting tour of the site and it's unique prehistoric carvings. The village itself is fairly disused and has only about 60 residents. For me it was a "Wow Moment" on my visit to Portugal.
