Portugal for Christmas/New Year Holiday

Hello!

My wife's birthday is around the holidays and this year we wanted to do a memorable trip to somewhere we've never been (last year for my 60th, we went to Greece/Santorini/Mykonos, so the bar has been set high). We plan to arrive Dec. 23rd, and depart on Jan. 3, both from Lisbon. We have the first three nights booked in Lisbon but so far nothing else is planned.

We definitely want to see Porto, Coimbra, Sintra, and Salema. Should we take the train straight away to Porto after we're done in Lisbon, then work our way back south from there? Is there any area I didn't mention that I should plan on visiting? I don't mind renting a car if it's really necessary, but would prefer train/bus if that will work.

We're foodies, and we love wine. We also enjoy sightseeing/boat tours, if the weather won't be too cold.

By my calculations you have 11 nights, is that correct? I would suggest dropping Salema. If you prefer trains there is no quick public transport there and you would be cutting the other cities short. If you rent a car, it is a long drive. Also in December, I don't think it would be all that charming.
Do you plan to stay in Sintra or just day trip from Lisbon? If you are daytripping, I'd suggest 4 night Lisbon, 4 Porto, 2 Coimbra and 1 last in Lisbon before your flight home. Or if you want to stay there, 4 night Lisbon, 3 Porto, 2 Coimbra and your last 2 in Sintra.
