During the Christmas/New Year some attractions are closed I would prebuy tickets for those that are open if you intend to visit Sintra palaces or Belem Jerónimos Monastery.
Public transit is also on modified schedule on some days, you can buy the train tickets between Lisbon and Porto a maximum of 60 days before departure, InterCity bus tickets are available a maximum of 30 before departure, available online.
Local commuter trains and buses tickets aren't available online.
December 31 I would return to Lisbon.
Keep in mind that it's the rainy season ( also colder than Dubai) and the holiday season, you may have to adjust your itinerary along the way.
