I read (but can’t find the thread) about the most interesting port tours. I am not a big drinker, but I find the process fascinating. My plan is to spend the later part of the afternoon exploring this into evening (hoping to catch a sunset). Did anyone do this?

Graham's has a wonderful tour and tasting experience. The people there are extremely knowledgeable and lovely. You can also book a table at the restaurant or take a drink out to the patio. It has wonderful views over the river. It is located on the hills above the other port houses. I've heard good things about Calem but didn't go there. Stay away from Sandeman. Or if you do go there go first so you won't be disappointed.

Taylor Fladgate is at the top of the hill in Gaia (where all the bodegas are). They have a terrific tour and tasting and, if your pockets are a bit deep, a wonderful restaurant for lunch or dinner. https://www.taylor.pt/us
make reservations at the lodges you want to visit. They do sell out.
I have read a number of different ways to get to Gaia but I wonder what other people’s experiences have been. I would like to take the opportunity to cross over the bridge to take some photos. Has anyone done this?

Yes, Victoria...and both the upper and lower decks are walk-able, and are interesting in their own way.
If you don't care to walk, the metro takes you across on the upper deck.

Crossing the bridge is extremely easy. On the Gaia side, there is a cable car that can take you from the river to the upper level. It’s a bit of a tourist trap, but provides additional nice views.
