Overnight in Sintra

We're considering spending 2 to 3 nights in Sintra so we can enjoy the town during the morning and evening when the day-trippers from Lisbon return there. We don't like rushing through places. We're thinking we could take in the local sights and also take a cooking class one day or a wine-tasting trip. Is 3 nights in Sintra too long based on the activities we're contemplating? Thanks!

We stayed for 2 nights to do exactly as you suggest to avoid crowds. We loved it! Could have spent a third day daytripping to Cascais and Cabo da Roca. We didn’t have time to see the Capuchin Monastery that would have been a nice juxtaposition to all the wealth. I can’t imagine trying to see everything in a day trip as many do.

I'm staying 3 nights in Sintra and I don't plan to do a cooking class or a wine tasting trip, so it doesn't sound like too long to me. I also want to take my time seeing things and I'm looking forward to wandering the town after the crowds thin out. I'll head out to the coastal area one day to do some hiking and exploring as well.

We stayed two nights which was enough but three probably would have been better.

I also stayed 2 nights and enjoyed my stay. I did this immediately after flying into Lisbon so 3 nights would have been better as my first day was just a half day in a jetlagged stupor. I stayed at the Chalet Saudade (which someone on this board recommended) and really enjoyed my stay there; it was a short walk from the train station. There is a very nice restaurant across the street called Incomum which had excellent food; reservations are necessary, but I made one just a day in advance.
