I am planning on flying into Madrid, wanting a few days there, and then was thinking about the train to Seville for a few days and then into Portugal. I am flying out of Lisbon on the way home. That would give me 6-7 days in Madrid and Seville, and then 15 days in Portugal. Does this sound doable?

Yes. Consider flying from Seville to Lisbon. Ryanair flies that route. Or look at flights from Seville to Porto, and then make your way from Porto to Lisbon over that 15 days, and then fly home from Lisbon

Sounds very doable and I agree with flying from Spain to Portugal. The bus is only other viable option.
You don’t say when you are traveling. Be aware that Spain will be extremely hot in summer. Sevilla even hotter than Madrid.
