Flight times have been changed from Houston to Malaga, and now we have an almost 5-hr layover in Lisbon (11AM-4PM). Is that enough time to take the Metro into the central city to have lunch and walk around a bit?
We aren't pressured to "see the city" in those few short hours because we have a 2-day stopover there on our way back home.

I was in Lisbon two weeks ago. It's up to you whether to go into the city, but I would recommend against it. The layover time is tantalizing, but five hours might be a bit tight. At the same time, it's not out of the question, depending on your comfort level.
If you decide to go into downtown, the Metro entrance is next to the Lisbon airport. You take the Red Line 11 stops to the S. Sebastiao station. Then you would transfer to the Blue line in the direction of Santa Apolonia and go four or five stops to either the Restauradores or the Baixa-Chiado station. If you do this, take a cab back to the airport to catch your flight.

That has been a popular question on this forum. You can see previous discussions by entering "Lisbon layover" in the search field above. I would also stay at the airport, especially since you have the opportunity to see Lisbon better later.
Thanks for the input. We'll probably stay at the airport. It's just such a long time to be bored in an airport, but dashing into town on a layover is nerve-wracking. We've done it twice in NYC and once in Paris, but we had 6-9 hours those times.
