Hi, my plan is to fly from Lisbon to Casablanca in late June. Are TAP or Ryan Air good choices? Or is there another short hopper on that route? Could be Fez; just somewhere in Morocco.

They’re both fine. They’ll nickel and dime you, so best to plan/pay ahead. All things being equal, I’d take TAP. Heads up that Ryanair has a weird thing where you have to go to a different desk in the airport to get your travel documents checked.
I’ve only been there a couple times, but my family was old school Brownsville.
If you have a choice, Fes and Marrakech are more interesting cities than Casablanca. The latter is a lot more modern looking. If you're flying back to North America from Morocco, though, Casablanca will probably be our departure point.
Martie, I made that trip, bunches of years ago. We flew Lisbon to Casablanca on either TAP or Royal Air Maroc, then picked up a rental car at the Casablanca Airport and drove right to Rabat. Rabat was a pretty city, not too crowded then, an easy transition into Moroccan life. As the National Capital it has a lot of embassys, foreign residents, public buildings, modest size souk, etc. From Rabat we drove around to various parts of Morocco, very diverse and enjoyable, then returned Marakkesh to Lisbon, connecting in Casablanca I expect. We avoided the city of Casablanca altogether.
If you want to fly to Casablanca, Ryanair is a very bad choice since they don't fly to Casablanca.
In general, TAP is the Portugese flag carrier, founded 1945. They are a full service airline and a member of Star Alliance, Ryanair is a low cost airline where your ticket will include a seat but you have to pay extra for everything else.
Regarding travel within Morocco, they have an excellent train system.
