Lisbon, Coimbra, Porto/Douro, Cork Tour

My husband and college-age daughter and I are all joining up in Lisbon on Easter morning (April 16). We are planning to rent a car and have three nights "on the road" before we go back and have three nights in Lisbon. For our road trip, we are interested in the University in Coimbra; wine tasting and the beautiful landscape of the Douro Valley (and possibly Porto?); a cork farm tour/farm stay near Evora/Redondo. What is the best order in which to do these things? Also, if we have three nights in Lisbon (flying out early Saturday morning), perhaps it is not necessary to also spend a night in Porto?

You have only three nights on the road, away from Lisbon. Porto is wonderful, but with only three days, I would stick to the Lisbon area and visit Evora on a day trip from Lisbon. Also, visit Sintra and Cascas, which can be done on a day trip as well. You could visit Batalha Cathedral, Obidos, and Navaarre, perhaps spending a night or two in that area.

If you rent a care and drive directly to Coimbra or Porto from Lisbon, even taking the fast toll roads, you will use almost half a day just getting there.
