wondering if we will be able to pay with credit card when we land in lisbon and take taxi to our hotel or if we need to find airport ATM to get euros?.

Ask before you get in, but most will. Or, you could take Uber. We used Uber all over Lisbon and they are cheap.

We always take an Uber
The taxis in Lisbon have an excellent reputation. Friendly, honest and quick. We have used them when downtown with no problems and recommend them if you are in need.
EXCEPT from Lisbon airport. There are too many reports of jet lagged Americans getting taken advantage of by taxis waiting at the arrival area.
If you are unable/unwilling to use Uber, I suggest you at least walk from the Arrivals level up to the Departures level before hailing a cab. Drivers dropping someone off are grateful to get a quick turnaround.
