If you wanted to spend 2-3 days at a beach in Portugal which one would you choose and why?

It would depend on the time of year, partly. I might go to the Algarve in late September as the water would be warmer than the rest of the country and, possibly, the tourist hordes would be lessened. You have more and larger beaches, though. However, if the beach is all you are interested in, I wouldn’t go that far if the rest of the trip was Lisbon or north.
If you want to be close to Lisbon and don’t have a car, it would be Cascais. I live here and love it, but the beaches are small and very crowded in the summer, especially on the weekends. Guincho beach, a few miles out of town is larger and less crowded. It’s likely under €5 for a Uber or Bolt. But, the old town is very charming, with a very large variety of restaurants and can be reached easily on the train.
Ericeira is also quite nice with a lovely beach. You would need a car, though. Mafra Palace is nearby if you want a break from the beach. It’s smaller than Cascais or Lagos but is starting to fill up in the summer also.
