Have you checked the fisherman's trail in Alentejo and Algarve Region? It's a long multi-day hike, but the region is amazing...

There are also the Camino Portugues from Lisbon north through Tomar, Coimbra, Porto (along the coast or inland), Guimaraes,Braga, Valenca Portugal on to Santiago de Compostela Spain or Camino Fatima which are both well marked and a mixture of urban and rural.

Walking the Camino would be the easiest. Go for the central route out of Porto. Follow the yellow arrows.
