Eight Day Trip to Portugal - Itinerary Suggestions Welcomed

Hi - Traveling to Portugal in May and will have eight full days there. We are a group of 4 women - two in their 50's and two in their 20's. We're flying in and out of Lisbon and plan to spend three nights in Lisbon on the back end of the trip and have an airbnb booked for those nights. Otherwise, we have made no plans yet. We'll be arriving from the US (east coast), so I wouldn't want to go too far on the day we arrive. We've all traveled pretty extensively overseas, but none of us has been to Portugal. So we're very excited and ready to get all plans in place.

We are open to anything, but generally want a mix of walking/sightseeing, good food, possibly wine tasting, and day or more relaxing at or near a beach. We are not interested in trying to cram everything in - we know we'll go back. Also open to renting a car, but don't feel strongly if it makes more sense to take train or Bolt/Uber.

Would love suggestions for an itinerary or even just recs on the not-to-be-missed cities/sites for first-timers. Thanks so much!!

This sounds really fun! First I would not get a car in Lisbon. Uber is very easy to use and very inexpensive. We stayed at The Ivens, a Marriott property, and The Emerald House, a Hilton Property. The location of The Ivens was excellent for walking and hotel and bar were really nice. Emerald House had a fantastic breakfast and was still good for walking but was further out from city center. We went with general ideas of things we wanted to see but pretty much “winged it” and it was great. We took the tram to old town (very cool) and walked through Sao Jorge, saw Pink Street, Green Street and the food hall. The Santa Justa elevator is cool-so many places to explore and see. Don’t leave without trying pastel de nata! We also went to Porto which was a dream! We took the train from Lisbon which was very easy. Have fun!
