Easter is early this year - Portugal for a family?

I am so excited to visit Portugal this Spring with my wife and my 5-year-old-daughter: As a teacher, I am limited to when I can travel. Easter is on March 31 this year, and I am trying to decide whether to book at Easter or wait until early- to mid-May. We are low-key and love off-the-beaten-path places, but I am worried about whether it will be warm enough to swim (in pools, not the ocean) during the first week of April. We will most likely focus on the Algarve region. I love the idea of everything being in bloom and colorful, but I want to try to hit that sweet spot between the spring colors and warmer (not necessarily hot) weather.

Two potential problems with the Easter time period.

First, it will not be warm enough to swim in early April, even in pools, unless they are inside. But, it won’t be warm enough in May for the sea, either. The Atlantic is cold!
The second is how busy the Easter period is in Portugal. A lot of Spanish people come to Portugal for the Easter school break. So, it will be more crowded than early to mid May.

The temperatures in May are usually very nice. Rarely does it get hot until June.
