Does anyone know what the Douro Valley is like in late May?

I was in Pinhao in late May 2019 and it was sunny, clear and low to mid 70's. Which correlates with historic averages. https://www.timeanddate.com/weather/. Whether that will be the case going forward is anyone's guess.

Thanks for your reply. What I’m wondering is whether it’s likely to be green and lush, or (coming out of winter) brown and just getting started.

It should be green by late May. Spring and warmer weather occur much earlier. That said, I’ve never been up there in May so can’t guarantee it. If you are going to stay in the Douro, I would suggest asking the hotel or Quinta.
