Hello again!
We are planning a 14 day trip in the last week of April and first week of May, using public transportation (train, bus, Bolt/Uber). Would either of these towns be a good Silver Coast stopping place? We are already planning to visit Coimbra. This would be additional. I am looking for an interesting fishing town with a beach.

I went to Aveiro for similar reasons -- it is on the Porto to Lisbon trainline, beach, and sounded like an interesting town. It was pleasant enough but a bit disappointing. The canal area is not extensive, the beach is a 35 minute bus ride away, the art nouveau buildings are attractive but there are only a few of them. There are some good fish restaurants that serve very freshly caught fish. I had looked into Peniche but did not go there. If I remember correctly, I think the public transportation to Penich from Porto, Cpimbra or Aveiro was not very convenient.

Peniche is nice enough but is not easy with public transport. Aveiro is not really Silver Coast and I agree with the previous poster about not being that impressed.
You might check out Ericeira. I, personally, prefer it to Peniche. Again, though, public transport isn’t that great. It would need to be by bus and I don’t know how often they run.
