2 weeks in Portugal at the end of April, suggested itineraries for an active traveler?

I'll be flying in to Lisbon on April 20th and will have about 2 weeks in Portugal. I love hiking, food and exploring trails and narrow city streets. I was thinking of Lisbon, Porto and ? I will be using public transportation. Any suggestions of little towns to explore? I tend to like things quiet and would love to find some little towns to take walks out of. Thanks for any ideas or comments you may have.

We visited the following between Lisbon and Porto: Evora, Obidos, *Alcobaça, Batalha, *Coimbra, *Guimares. Stars next to favorites! We rented a car.

An issue with wanting to visit small towns and using public transportation is that many small towns are not well served by public transportation, meaning infrequent bus or train service. In addition to the places Suki mentioned, Tomar and Lamego were also nice while Viseu was ok. I wouldn’t consider any of those small. We too had a rental car.
